Crack Cookies

List of ingredients:

  • 250 grams of coconut flour
  • 120 grams of cocoa ( I used 2 different types of cocoa but that is just personal preference)
  • 100 grams of crushed nuts
  • 250 grams of powdered sugar
  • 3 egg whites
  • 3 egg yolks
  • extra powdered sugar (cca. 100 grams)

First we mix all 3 egg yolks.

After this is mixed we start adding 250 grams of powdered sugar.

Next we start putting in the cocoa powder.

We then follow up with 250 grams of crushed nuts.

And that leaves us with only the coconut flour and egg whites. First we are going to put in all 250 grams of cocnut flour. While that is mixing well we can take that time to beat up the egg whites.

Last but certainly not least we mix in the beaten up egg whites ino our mixture. I’d recommend using a whisk for this so we do not ruin the properties of beaten up egg whites.

Bonus tip: Mix in the beaten up egg whites by only lifting up the mixture and putting it on top of the beaten up egg whites and not actually whisking it because then we would be doing the same thing a mixer is doing it.

Now we can prepare to get our hands “dirty”. We must prepare a baking tray which is covered with a layer of parchment paper so that our cookies won’t stick to it. We need to also get ourselves a plate in which we have 100 or so grams of powdered sugar so we can roll our crack cookies into it.

Now we finally start making little ball shapped cookies and rolling them over some powdered sugar.

After some time and effort our baking tray should be looking a little something like this.

You should also make sure that you do not put them too close to one another since they rise in the oven.

They make at around 180 °C ( 356 Fahrenheit) for 5-7 minutes. I wouldn’t recommend any more than that since they easily burn.

I decided so serve them up with a cup of tea since that combination is to die for.
