Crispy coconut squares

List of ingredients:

  • 1 egg
  • 170 grams of sugar
  • 1 teaspoon of vanilla aroma
  • 1 teaspoon of baking powder
  • 75 grams of coconut flour/flakes
  • 50 grams of crushed nuts
  • 115 grams of butter
  • 130 grams of flour

We start of by preparing the base of our dessert. We do that by putting 130 grams of flour combined with 70 grams of sugar in a mixing bowl. Next step requires our hands to get involved. So we simply grab the butter and start mixing it together with the sugar and the flour until it gets the consistency of breadcrumbs.

Next we grab a baking tray and cover it with parchment paper. The size of the baking try should be 33 cm * 23 cm . And  now we simply spread the mixture equally throughout the entire baking tray.

We put the baking tray in the oven for 8-10 minutes at 175°C (347° Fahrenheit).

In the meantime we prepare the coconut layer. We do so by mixing 1 egg combined with 100 grams of sugar, 1 teaspoon of baking powder and 1 teaspoon of vanilla sugar.

And now we start whisking.

After the mixture gets a texture that is similar to this one add 50 grams of crushed nuts.

After this is mixed well we add our finaly ingredient which in my case is 75 grams of coconut flakes.

When the base has fully baked we take it out of the oven and wait a tiny bit for it to cool down. Then we start adding the upper layer to our base.

All there is left to do is to fully bake this dessert. So once again put it in the oven at 175°C (347° Fahrenheit). However this time we want it to bake a bit longer around 12-15 minutes.

After it has fully baked take it out of the oven and let it cool down. This makes it so it is easier to cut and it is not so sticky.

After waiting a short while grab a knife and start cutting small squares.

Coconut kisses

List of ingredients:

  • 3 egg whites
  • pinch of salt
  • 220 grams of powdered sugar
  • 200 grams of coconut flour
  • 1 teaspoon of lemon juice

We start off by mixing the egg whites to which we add 1 pinch of salt and 220 grams of powdered sugar.

Now we mix this mixture until it becomes hard and thick.

Next we start mixing in 200 grams of coconut flour slowly and make sure we don’t liquify the mixture too much.

Next we prepare our baking try on which we put some parchment paper.

The only thing left to do is to create the kisses. We do that by grabing a piping bag and filling it up with the mixture we made a few minutes earlier. Now we jsut start making shapes looking similar to this.

We put this baking tray in the oven for 20 minutes on 150°C ( 302 Fahrenheit) and the coconut kisses are ready to eat.

Doughnuts

List of ingredients:

  • 1 kg of flour
  • 1 cube of yeast
  • 1 package of baking powder
  • 1/2 l of milk
  • 7 egg yolks
  • 60 grams of sugar
  • 1 package of sugar with vanilla
  • 1 dl of oil (+ 1.5 liters for frying)
  • 1/2 dl of rum
  • 1 teaspoon of salt
  • 1/2 juice of a lemon
  • filling of choice
  • Powdered sugar

We start off by preparing yeast. We do that by crumbling 1 cube of yeast and adding to it a bit of sugar, flour and milk but don’t exaggerate with the amount. And we set this mixture next to something hot. In my case I set it next to the fireplace so it will rise quicker.

Now we start preparing the dough. First grab a big bowl and put all 7 egg yolks in it comined with 60 grams of sugar.20170226_111739

Now we mix it until it starts to turn yellow. Once it turn to this color we can add the rum and oil into our dough mixture and mix it well.

Next we add the lemon juice and yeast which rested next to a warm place.

And now we start putting in flour and milk in small amounts alternately until we used up the whole flour and milk.20170226_112536

After mixing all of our ingredients well the dough should look similar to this.

Now we start making balls out of our dough. I suggest using a scale for this and putting 70-100 grams of dough into each ball. After using up all the dough we let the balls rest for 30-45 minutes so they rise.

After the balls have rested we put oil in a pot about 3 fingers thick and turn the stove on high until the oil gets hot. Then we start putting balls we made 30 minute ago into the pot. Be careful not to put to many balls in it at once.

Depending on the temperature of the oil the doghnuts will start turning brown and after they get to the color you desire (light brown or dark brown) we flip them.

After they have the same color on top as they have on the bottom they are ready to be taken out of the pot.

Now we grab our filling of choice and start filling them.

After filling up the doughnuts with our filling of choice we sprinkle some powdered sugar on top and after that they are ready to eat.

Linzer cookies

List of ingredients:

  • 80 grams of sugar
  • 200 grams of butter (Room temperature)
  • 300 grams of flour
  • Pinch of salt
  • Lemon peel
  • Vanilla sugar
  • 250 grams of jam

We start off by mixing 200 grams of butter.

After thats mixed well we add the sugar.

Next we add 300 grams of flour. Be carefull not to put all of it in at once or the mixer might not mix it as good as we’d like it to.

Now we continue mixing it until it lookis a little something like this.

Now we take it out of the mixer and start mixing it by hand and try to form some sort of a ball. We knead it until it gets a dough like texture.

Now we jsut put it back in the mixer for a couple of turns and after it looks like this it is ready to go in the fridge. I suggest putting it in some sort of foil so it doesn’t stick to the fridge.

Now we let it rest for about half an hour.

After 30 minutes we get our workplace ready. We do that by putting cleaning it and putting flour on it.

Now we can continue with the next step which is to roll out the dough.

Now we grab a cookie cutter and start making circles out of our rolled out dough.

In some circles cut out a heart like shape so our cookies

Now we put them in the oven that was preheated to 200°C  (392 Fahrenheit) for 8 minutes until they become golden brown color.

Now we take a circle cookie that doesn’t have a heart cut out and spread some jam on top of it.

As for the cookie with the heart cut out we just simply put some powdereded sugar on top of it.

The last thing we have to do is to put the cookie with the heart cut out on top of the cookie without the heart cut out.

And that’s how you make Linzer cookies.

Pro Tip: Make the cookies right after they come out of the oven so they glue to one another.

Cool Potica with walnuts or poppy seeds

Sponge cake:

  • 900 grams of flour
  • 1/2 of a teaspoon of salt
  • 30 grams of yeast
  • 100 grams of sugar
  • 140 grams of butter
  • 4 egg yolks
  • 1 vanilla sugar
  • lemon peel
  • approximately 3 dl of milk
  • 4 tablespoons of rum

Filling

For Nut Roll

  • 400 grams of ground walnuts
  • 150 grams of sugar
  • 2 dl of milk

For Poppy Seed Roll

  • 400 grams of ground poppy seeds
  • 150 grams fo sugar
  • 2 dl of milk
  • 4 egg whites

First we take a large mixing bowl and put 800 grams of flour into it.

After that we make a little hole in the middle where we will put the rest of our ingerdients. First come 4 egg yolks.

Next come the 4 tablespoons of rum.

After that we put in 100 gams of sugar.

Do not mix it quite yet!

Let it sit for a little while and in the meantime we can prepare our yeast.

We crumble the 30 grams of yeast into a large cup.

Next we add in some sugar.

Finally place in 0.3 dl of milk and set it by a fireplace or any place that is warmer than room temperature.

Now let’s get back to the mixing bowl.

Put in 140 grams of butter and after that’s all done we can start mixing it.

Mix it by making small circles and only picking up small amounts of flour at the time.

After a couple of minutes of mixing put in 3 dl of milk and mix the same way we did before.

After yeast has risen to the very top of the large cup it’s ready to be added to our mixing bowl.

Next we mix in the yeast and at the end it should look like this.

Now we can move on over to the second step which is to knead the dough.

First we must get our work area ready by simply putting some flour on to it.

Now we can start making our filling.

For Nut Roll:

We put 400 grams of ground walnuts in a bowl and add 150 grams of sugar to it.

That’s all there is to the walnut filling.

For Poppy Seed Roll:

We put 400 grams of ground poppy seeds in a bowl and add 150 grams of sugar to it.

Last but not least we put in 4 beaten up egg whites.

Next we need to roll out our dough so that we can put in the filling.

Next we put on top of filling of choice and spread it arond the rolled out dough.

I have also decided to put some raisins into my potica but this is just personal preference.

After raisins are spread throughout the whole dough we can roll our potica.

First we need to roll it a little bit by force by simply rolling the dough with our hands. However then we continue by grabbing the cloth and putting enough force into it so that the potica rolls by itself.

Finally we just need to prepare our mold which is covered by parchment paper and put our potica in it.

Next we let it rest for the whole night.

And the next morning we put it in the oven at 190°C ( 374 Fahrenheit) for 1 hour.

Crack Cookies

List of ingredients:

  • 250 grams of coconut flour
  • 120 grams of cocoa ( I used 2 different types of cocoa but that is just personal preference)
  • 100 grams of crushed nuts
  • 250 grams of powdered sugar
  • 3 egg whites
  • 3 egg yolks
  • extra powdered sugar (cca. 100 grams)

First we mix all 3 egg yolks.

After this is mixed we start adding 250 grams of powdered sugar.

Next we start putting in the cocoa powder.

We then follow up with 250 grams of crushed nuts.

And that leaves us with only the coconut flour and egg whites. First we are going to put in all 250 grams of cocnut flour. While that is mixing well we can take that time to beat up the egg whites.

Last but certainly not least we mix in the beaten up egg whites ino our mixture. I’d recommend using a whisk for this so we do not ruin the properties of beaten up egg whites.

Bonus tip: Mix in the beaten up egg whites by only lifting up the mixture and putting it on top of the beaten up egg whites and not actually whisking it because then we would be doing the same thing a mixer is doing it.

Now we can prepare to get our hands “dirty”. We must prepare a baking tray which is covered with a layer of parchment paper so that our cookies won’t stick to it. We need to also get ourselves a plate in which we have 100 or so grams of powdered sugar so we can roll our crack cookies into it.

Now we finally start making little ball shapped cookies and rolling them over some powdered sugar.

After some time and effort our baking tray should be looking a little something like this.

You should also make sure that you do not put them too close to one another since they rise in the oven.

They make at around 180 °C ( 356 Fahrenheit) for 5-7 minutes. I wouldn’t recommend any more than that since they easily burn.

I decided so serve them up with a cup of tea since that combination is to die for.

Marble Cake

List of ingredients:

  • 250g of butter
  • 500g of sugar
  • 4 egg yolks
  • 4 egg whites
  • 1 sugar with vanilla exract
  • 1 baking powder
  • 500g of flour
  • 1,5dl of milk
  • 2 tablespoons of rum
  • 3 tablespoons of cocoa powder

We start off by putting 250 grams of butter into a mixing bowl and mix it well.

After we get a nice consistency we start adding all of the sugar. However we must be carefull not to put all of it in at once because that way the texture will get ruined since the mixer won’t be able to mix it very well.

Next we add in 4 egg yolks and start mixing it.

Next we put in 3 tablespoons of rum.

After there is no more liquid left from rum we can put in 1,5dl of milk.

Now that the milk is fully mixed it we can go onto the next step. And that is to put in 500 grams of flour. And  once again we must do the same exact thing we did with the sugar for obvious reasons.

And while the flour is mixing we can beat up 4 egg whites and add them to our mixture so it gets softer. But now we can no longer continue with a mixer since that would ruin the beaten egg whites and have to use a whisk and do it the “old fashioned” way.

Next we choose our baking mold andput in some parchment paper so that the Marble Cake doesn’t stick to it. But do not put in all of the mixture, put in only half or so depending on how much chocolate you want in your dessert.

And we put in 3 tablespoons of cocoa powder in the rest of the mixure and mix it until the cocoa powdfer is fully mixed into the batter.

Now we only need to put the brown batter on top of the yellow one.

Now we just need to put it in the oven at 180°C ( 356 Fahrenheit) for 75-90 minutes.

Bonus tip:

To make it even prettier and yummier you can put some powdered sugar on top.

Apple Pie

List of ingredients:

Sponge cake

  • 350g of flour
  • 1/2 of a packet of baking powder
  • 1 packet of sugar with vanilla extract
  • 120g of powdered sugar
  • 150g of butter
  • 2 egg yolks
  • 4 table spoons of sour cream

Filling

  • apples ( the amount depens on how much filling you would actually have)
  • 80g of sugar
  • 1 table spoon of bread crumbs
  • a pinch of cinnamon

First of all we need to put our flour through a sieve to make it easier to work with.

We do the same thing with half a packet of baking powder and it should form into some kind of a pyramid.

After that we need to make a medium sized hole in the middle where we will put the rest of our ingredients. I find using a finger the easiest method.

After that we add into the hole 150g of butter. But we must not mix it in yet.

Then we put in 120g of powdered sugar and 1 packet of vanilla sugar. Once again we do not mix it yet.

Then we put in the 2 egg yolks.

After that’s all done we put in 4 table spoons of sour cream.

Now get ready to get yourhands dirty because now we start mixing it. We star by putting flour at the edges on top of the hole. And then we just mix it all up.

We need to knead the dough until it looks like this.

And now all there is left for us to do is to turn it into a ball.

Now we let the dough rest for 30 to 60 minutes. In the meantime we can prepare the filling for our apple pie.

For the filling we can take whole apples from which we have extracted the core and just start grating them. After the selected amount of apples is grated we put them into a pot and cover them with a lid. This will make the apples soften up and make them taste better.

Next we put the 80g of sugar directly on the apples and let it soak in.

Once the sugar is all gone our filling is ready.

Now we can take our dough and cut it in half.

We use the roller to roll out the dough.

Next we put the freshly rolled up dough on top of the roller and carefully place it into the baking mold.

Then we pull up the edges of the dough until it reaches the edge of the mold.

And now we can begin putting the filling on top of the dough.

Now we roll out the second half of our dough.

Next we use a cutting wheel to make strips of dough.

After we have the strips we can put them on top of the filling. However before putting the strips on we need to use bread crumbs so the strips won’t get stuck to the filling and it’s easier to decorate.

Now we just put our apple pie in the oven for 1 hour on 180°C (356 Fahrenheit).

After it’s baked we must let it cool off before serving it to other people so that they don’t burn themselves and so the apple pie doesn’t cruble to much.

After it’s cooled off we can just cut out little triangles and if oyu want to make it even sweeter you can serve some whipped cream along with the pie since they work together very well.

Dogs’ Snouts

List of ingredients:

Sponge Cake:

  • 200 grams of flour
  • 150 grams of sugar
  • 4 eggs
  • 8 tablespoons of cocoa powder
  • 100 ml of oil
  • 125 ml of milk
  • baking powder

Topping

  • 150 ml of milk
  • 2 tablespoons of rum

We start off by putting all 4 eggs into the mixing bowl.

After we mix them for several minutes we add 125 ml of milk and mix that until we get a mixture that looks like this.

The next step is to add all the flour with the baking powder, however, we must be careful to add it little by little so it mixes well.

We continue by adding 8 tablespoons of cocoa powder so we get that rich chocolate look and flavour.

Now the mixture is ready to go and all we need to do is to put it in the oven. I recommend a baking tray with dimensions 20 x 32 cm. The next step is to place the parchment paper into the baking tray since this will make things much easier when you will take the sponge cake out of tray. If you don’t have parchment paper you can easily use butter and spread it on the tray in thin layer, as this will also prevent sponge cake from sticking to the tray.

Then we fill the tray  with our batter and put it in the oven on 180 °C ( 350 Fahrenheit) for 20 to 30 minutes.

TIP: How to know when the sponge cake is perfectly baked? – Take a toothpick, stick it in the middle of sponge cake and then take it out. If the toothpick is smooth and clean, without any raw batter, then you can turn off the oven.

Take the sponge cake out of the baking tray and move it on a normal, plastic tray.

Then we put milk on the hot stove and add 2 tablespoons of rum. After the mixture has boiled we start to soak our sponge cake until we use it all. I recommend to use a spoon instead of just pouring all of the milk directly from the pot as this will make our dogs’ snouts evenly moist.

All there is left to do is to serve the dessert, so just take a knife and cut it in any shape you like. I have decided for little triangles, so they would resemble real dogs’ snouts and I have decorated them with little sugar pearls on top of them. Right before serving add some whipped cream or even some vanilla ice cream (or both!) and these dogs’ snouts will be gone in seconds.

Cottage cheese cake with a Halloween twist

List of ingredients

Sponge cake:

  • 6 egg yolks
  • 6 egg whites
  • 180 grams of sugar
  • 200 grams of flour
  • 1/2 a package of baking powder

Cream:

  • 700 grams of cottage cheese
  • 100 grams of butter
  • 1 sweet cream (250ml)
  • 1 vanilla pudding
  • 4 tablespoons of sugar + 1 tablespoon of vanilla sugar
  • 250 ml of milk
  • 3 tablespoons of rum
  • juice from 1 lemon (you can leave this out if you don’t want it to be too sour)

We start off with the preparation of sponge cake. First of all we stiffly beat all six egg whites until they turn white and fluffy (Tip: You can add a pinch of salt to make it extra stiff). It should look something like this.

After this we start adding sugar to it. However, we mustn’t add it all at once, instead we have to add it little by little so it mixes well.

After all the sugar is added and mixed up it should look like this.

The next step is that we slowly mix in the flour with baking powder little by little just like we did with sugar.

Once our sponge cake is complete all there is left to do is to put it in the oven. Since I have a cake mold  (26 cm in diameter) without a bottom I decided to put a baking sheet under it. I have rolled up 1 sheet of baking parchment and 2 sheets of aluminium foil round the mold so they fitted it perfectly.

Now all there is left to do is to fill up the mold with the sponge cake mixture. As you can see on the photo bellow, I have spread the batter also directly on the mold since this helps the batter to rise more evenly.

Next we put the filled up mold into the oven which was preheated to 200°C (cca. 400 Fahrenheit). After it rises we lower the heat to 175°C (cca. 350 Fahrenheit) and bake it for 30 more minutes.

While the sponge cake is baking in the oven we can prepare the cream.

The first step in preparing the cream is to mix up the butter well and slowly start putting in the cottage cheese.

After the cottage cheese is mixed in well we add lemon juice.

In the meantime we can put the 250 ml of milk on the stove and add sugar with vanilla.

As we wait for milk to start boiling we mix pudding powder with 3 tablespoons of cold milk. Then we pour the mixture into the boiling milk.

After the pudding has thickened up we move it off the stove onto a cold area and constantly stir it until it cools off. While we are mixing it we add rum.

We add cool pudding to the mixture of cottage cheese and butter.

Then we whip the sweet cream and add it to the mixture.

This is how your cream for the cake should look like.

After the sponge cake has cooled down we cut it in half.

Because the sponge cake might be a little dry we can fill up 1-2 glasses of water (cca. 200-400 ml), add 1-2 tablespoons of sugar and slowly pour it on both halves of the sponge cake using a spoon. However, this step is optional, it depends on what kind of cake you like.

After this we put half of the cream onto the lower part of the sponge cake and we spread it around equally.

Then we put the upper part of the sponge cake onto the bottom part and then we spread the remaining cream nicely around the whole cake.

For the Halloween twist we can grab some gummy candies in spooky shapes (spiders, pumpkins, witches, ghosts etc.) and spread them around the whole cake evenly.
