Crispy coconut squares

List of ingredients:

  • 1 egg
  • 170 grams of sugar
  • 1 teaspoon of vanilla aroma
  • 1 teaspoon of baking powder
  • 75 grams of coconut flour/flakes
  • 50 grams of crushed nuts
  • 115 grams of butter
  • 130 grams of flour

We start of by preparing the base of our dessert. We do that by putting 130 grams of flour combined with 70 grams of sugar in a mixing bowl. Next step requires our hands to get involved. So we simply grab the butter and start mixing it together with the sugar and the flour until it gets the consistency of breadcrumbs.

Next we grab a baking tray and cover it with parchment paper. The size of the baking try should be 33 cm * 23 cm . And  now we simply spread the mixture equally throughout the entire baking tray.

We put the baking tray in the oven for 8-10 minutes at 175°C (347° Fahrenheit).

In the meantime we prepare the coconut layer. We do so by mixing 1 egg combined with 100 grams of sugar, 1 teaspoon of baking powder and 1 teaspoon of vanilla sugar.

And now we start whisking.

After the mixture gets a texture that is similar to this one add 50 grams of crushed nuts.

After this is mixed well we add our finaly ingredient which in my case is 75 grams of coconut flakes.

In the end it should look like this.

When the base has fully baked we take it out of the oven and wait a tiny bit for it to cool down. Then we start adding the upper layer to our base.

All there is left to do is to fully bake this dessert. So once again put it in the oven at 175°C (347° Fahrenheit). However this time we want it to bake a bit longer around 12-15 minutes.

After it has fully baked take it out of the oven and let it cool down. This makes it so it is easier to cut and it is not so sticky.

After waiting a short while grab a knife and start cutting small squares.

Linzer cookies

List of ingredients:

  • 80 grams of sugar
  • 200 grams of butter (Room temperature)
  • 300 grams of flour
  • Pinch of salt
  • Lemon peel
  • Vanilla sugar
  • 250 grams of jam

We start off by mixing 200 grams of butter.

After thats mixed well we add the sugar.

And the vanilla sugar.

Next we add 300 grams of flour. Be carefull not to put all of it in at once or the mixer might not mix it as good as we’d like it to.

Now we continue mixing it until it lookis a little something like this.

Now we take it out of the mixer and start mixing it by hand and try to form some sort of a ball. We knead it until it gets a dough like texture.

Now we jsut put it back in the mixer for a couple of turns and after it looks like this it is ready to go in the fridge. I suggest putting it in some sort of foil so it doesn’t stick to the fridge.

Now we let it rest for about half an hour.

After 30 minutes we get our workplace ready. We do that by putting cleaning it and putting flour on it.

Now we can continue with the next step which is to roll out the dough.

Now we grab a cookie cutter and start making circles out of our rolled out dough.

In some circles cut out a heart like shape so our cookies

Now we put them in the oven that was preheated to 200°C  (392 Fahrenheit) for 8 minutes until they become golden brown color.

Now we take a circle cookie that doesn’t have a heart cut out and spread some jam on top of it.

As for the cookie with the heart cut out we just simply put some powdereded sugar on top of it.

The last thing we have to do is to put the cookie with the heart cut out on top of the cookie without the heart cut out.

And that’s how you make Linzer cookies.

Pro Tip: Make the cookies right after they come out of the oven so they glue to one another.

Cool Potica with walnuts or poppy seeds

Sponge cake:

  • 900 grams of flour
  • 1/2 of a teaspoon of salt
  • 30 grams of yeast
  • 100 grams of sugar
  • 140 grams of butter
  • 4 egg yolks
  • 1 vanilla sugar
  • lemon peel
  • approximately 3 dl of milk
  • 4 tablespoons of rum

Filling

For Nut Roll

  • 400 grams of ground walnuts
  • 150 grams of sugar
  • 2 dl of milk

For Poppy Seed Roll

  • 400 grams of ground poppy seeds
  • 150 grams fo sugar
  • 2 dl of milk
  • 4 egg whites

First we take a large mixing bowl and put 800 grams of flour into it.

After that we make a little hole in the middle where we will put the rest of our ingerdients. First come 4 egg yolks.

Next come the 4 tablespoons of rum.

After that we put in 100 gams of sugar.

Do not mix it quite yet!

Let it sit for a little while and in the meantime we can prepare our yeast.

We crumble the 30 grams of yeast into a large cup.

Next we add in some sugar.

Finally place in 0.3 dl of milk and set it by a fireplace or any place that is warmer than room temperature.

Now let’s get back to the mixing bowl.

Put in 140 grams of butter and after that’s all done we can start mixing it.

Mix it by making small circles and only picking up small amounts of flour at the time.

After a couple of minutes of mixing put in 3 dl of milk and mix the same way we did before.

After yeast has risen to the very top of the large cup it’s ready to be added to our mixing bowl.

Next we mix in the yeast and at the end it should look like this.

Now we can move on over to the second step which is to knead the dough.

First we must get our work area ready by simply putting some flour on to it.

After the dough has been kneaded well it should look a little something like this.

Now we can start making our filling.

For Nut Roll:

We put 400 grams of ground walnuts in a bowl and add 150 grams of sugar to it.

Next we put in 2 dl of milk and mix that well.

That’s all there is to the walnut filling.

For Poppy Seed Roll:

We put 400 grams of ground poppy seeds in a bowl and add 150 grams of sugar to it.

Next we put 2 dl of milk to the bowl nd mix that well.

Last but not least we put in 4 beaten up egg whites.

Next we need to roll out our dough so that we can put in the filling.

Next we put on top of filling of choice and spread it arond the rolled out dough.

I have also decided to put some raisins into my potica but this is just personal preference.

After raisins are spread throughout the whole dough we can roll our potica.

First we need to roll it a little bit by force by simply rolling the dough with our hands. However then we continue by grabbing the cloth and putting enough force into it so that the potica rolls by itself.

Finally we just need to prepare our mold which is covered by parchment paper and put our potica in it.

Next we let it rest for the whole night.

And the next morning we put it in the oven at 190°C ( 374 Fahrenheit) for 1 hour.
